Spicy Egg Roll - Indian Street Food Recipe

A Spicy Egg Roll is a vegetarian Indian street food option that’s truly adored! An omelette, veggies and mint chutney wrapped in a soft and warm paratha bread is a perfect grab-and-go meal!

This Spicy Indian Egg Roll is one of my favourite street food recipes. It's a simple omelette that’s cooked in a paratha bread, topped with hot sauce, mint chutney, onions and tomatoes.

This egg roll is a classic to me. I remember the first time I had this egg roll! I was about 10 years old, visiting some family in Jaunpur over the summer. Eggs weren’t allowed in that household, but we were offered to try out this egg roll on the streets. Yum! My sister and I instantly fell in love at first bite! It was awesome to have eggs this way, and it was our first time ever having eggs in Jaunpur. We loved them so much that we’d sneak out of the house to get more, and we’d eat them on the roof so that no one could spot us bringing eggs to the house! The things you do for food you love!

The street vendors have a very neat way of making this roll, and in this video I'll be showing you the technique to make the best egg rolls! It's actually quite simple and you're sure to love this for a breakfast, lunch or even a snack!

What Bread to Use to Wrap the Egg Roll?

Traditionally, a white paratha bread is used to wrap the omelette. This bread uses all-purpose flour. If you want to learn how to make this bread, check out my White Paratha recipe! This is the ultimate bread for all your wrap needs! We’ll be frying the paratha in a pan with some ghee to create a lovely golden brown crust on the bread. You’ll really want to look for those lovely brown spots that have so much flavour!

You could use the traditional Classic Layered Paratha if you’d like, which uses atta flour, a type of whole wheat flour. However, note that the final product won’t have the authentic taste of egg rolls that are served by the street vendors.

Another bread option you could use is a ready-made tortilla if you don’t have time to prepare your own bread. Again, it won’t be authentic, but you gotta do what you gotta do sometimes! I fully support this substitute! For tortillas, I would recommend a white flour tortilla if you want to get as close as possible to the white paratha.

Tips for the Perfect Egg Paratha Roll

  • Use a heavy, non-stick omelette pan. This will help ensure the eggs fit well with the size of the bread and creates a fluffy egg paratha. A good pan will also help to easily move the eggs and paratha around without breaking the omelette.

  • Don’t be scared to place your paratha -or tortilla if preferred, on the eggs. Gently place the bread over the eggs and press lightly to stick the eggs to the bread all around.

  • Cook on a low to medium-low heat. Just like preparing an omelette, the slower you cook the eggs, the creamier they are. This will also make the bread really soft, which is great if you enjoy a soft roll. If you prefer your roll on the crispier side, simply turn up the heat after flipping the paratha, bread side down.

What Goes in a Spicy Indian Egg Roll?

Here is what you’ll need to make this Spicy Indian Egg Roll:

  • Eggs

  • Hot jalapeno tapenade or any hot sauce of choice

  • Tomato

  • Onion

  • Ghee

  • Paratha bread

  • Mint chutney

  • Salt and pepper to taste

You can add your favourite veggies inside the wrap. Here I’m using thinly sliced onions and tomatoes, but other great veggie options are cucumber and peppers.

I’m also going to be adding some hot sauce for a touch of heat, because I love some spice to my rolls! For the chutney, I’m using my favourite Cilantro Mint Chutney recipe. This will add a refreshing flavour to the roll, which nicely complements the hot sauce.

If you’re a vegetarian, I’d recommend adding some egg whites to the omelette to add more protein.

How to Make Spicy Indian Egg Roll

Begin by preparing your paratha bread. Read the recipe here if you’re unsure of how to do this.

Place your dough on your counter and add drizzle some ghee over it.

Heat a tawa on high heat.

As the tawa gets hot, roll out the paratha bread.

Crack two eggs into a small bowl.

Heat a non-stick pan on medium heat and add ghee to the pan.

As the pan gets hot, whisk your eggs and season with salt.

When the pan is hot, pour the eggs onto the pan.

As the eggs begin to cook, place the paratha directly on top of the eggs.

Using a spatula, gently press down on the paratha to ensure that they eggs are cooking and that they get some colour.

Once the eggs are cooked, flip the paratha and cook for an additional 30 seconds.

Set the egg and paratha aside on a cutting board. First, spread your mint chutney in the centre of the roll.

Then add a few drops of hot sauce.

Add your onion slices.

Followed by your tomato slices.

Now wrap your egg roll.

Then wrap the end of the roll in aluminum foil.

Serve hot and enjoy!

Spicy Egg Roll - Indian Street Food Recipe

This recipe is a homestyle take on a classic Indian street food. This is an egg roll that is wrapped in a paratha bread. In this recipe, I will show the technique that is traditionally used by the street food vendors to make this super quick meal.

  1. Heat a pan on medium-low heat and add ghee. In the meanwhile, whisk two eggs until well combined and add to the warm pan.
  2. Once the bottom of the egg starts to set, place white paratha or tortilla on the eggs.
  3. Use a spatula to gently press on the eggs to ensure it coats the underside of the bread. Keep cooking for 4-6 minutes until the eggs are done cooking. Then, flip the egg paratha and lightly toast the bread, about a minute or so. Set aside on a cutting board.
  4. Add the chutney, hot sauce, sliced onions, tomatoes and chicken tikka and wrap the kathi roll tightly . Serve hot and enjoy!
