Why I Love this Deli Chicken Sandwich Recipe

Hey everyone! This Baked Cheesy Deli Chicken Sandwich is a perfect choice when you want a quick and hearty lunch! It’s a great way to load up on healthy veggies, add in some cheese, and get your protein in when you have just a couple of minutes!

In this Baked Deli Chicken Sandwich we have loads of fresh veggies and a strong cheddar cheese! I’m using some some oven roasted deli chicken here to make it a convenient lunch option. I love getting lots of meat at the deli counter because there are so many options to choose from! I have to admit, when I get some deli meat, I do plow through it! Not only in lunches, but it makes for some great snacks in between meals!

This sandwich was my attempt to create a Subway experience at home. I like to enjoy a good sub, but I was loving purchasing some fresh baguettes at the grocery store! What better way to enjoy a soft and warm baguette than in a sub with your favourite goodies? Fresh, healthy, tasty and easy to make!

Ingredients for Baked Cheesy Deli Chicken Sandwich

You just need a couple of simple and fresh ingredients for this sandwich:

  • Oven Roasted Deli chicken (or deli meat of choice)

  • Baguette or ciabatta

  • Cheddar cheese

  • Lettuce

  • Tomato

  • Onions

  • Sriracha sauce

  • Thousand Island dressing (I followed this recipe)

  • Salt and pepper

You could purchase your favourite fresh baguette at the grocery store or make your own! I have yet to make a baguette at home, but that sure is one of my missions for the future. What are your current cooking goals? Let me know in the comments!

Why Deli Chicken?

Here I used oven roasted chicken for my deli meat of choice, but feel free to use any cut of meat you like! You could even mix and match your favourite deli meats! I tend to alternate between using turkey and chicken for my deli meats. I bet this recipe would work really well with some ham too, so be sure to give that a try and let me know what you think in the comments!

How to Make Baked Cheesy Chicken Sandwich

This sandwich can be made in just a few easy steps! This is perfect for lunch time! The only cooking that’s done with this sandwich is letting the cheese become molten in the oven! Be sure to scroll down to the bottom of this post so that you have the FULL PRINTABLE RECIPE for all ingredient measurements, and to save the recipe for later!

Preheat the oven to 400 F. Cut your baguette or ciabatta in half.

Arrange the deli meat onto the bottom slice of the bread.

Then, add your slice of cheese.

When the oven is hot, place your sandwich on a baking tray and bake for 6-8 minutes, or until the cheese has melted.

When your cheese has melted, take the baking tray out of the oven and place your sandwich on your work surface.

Add your shredded lettuce.

Followed by your sliced tomatoes.

Add the sliced onions and drizzle sriracha sauce.

There you have it! Close your sandwich and enjoy!

Serving Your Deli Chicken Sandwich

I topped this sandwich with a drizzle of Sriracha sauce and dipped it in Thousand Island dressing. Yes, I dipped my sandwich in sauce! I do that with burgers too, actually!

For me, the Thousand Island dressing really completed the sandwich, actually. It was one of my new obsessions at the time of creating this recipe. I had discovered it at the restaurant I was working at and was truly hooked! Be sure to try this out if you’ve never had it before, you won’t be disappointed!

Baked Cheesy Deli Chicken Sandwich

An amazing way to enjoy some freshly baked loaf, your favourite deli chicken and crispy lettuce with your favourite drizzle of sauce. For this sandwich, I decided to  savour it with some thousand Island on the side.
Prep time: 10 MCook time: 5 MTotal time: 15 M

Ingredients:

  • 75-100 g deli oven roasted chicken
  • 1/3 baguette or ciabatta
  • 1 slice cheddar cheese, cut in half
  • 1/4 Cup lettuce, shredded
  • 1 Tbsp tomato, chopped
  • 7-8 slices of onion
  • sriracha to taste
  • thousand island dressing to taste
  • salt and pepper to taste

Instructions:

  1. Preheat the oven to 400 F. Cut your baguette or ciabatta in half.
  2. Arrange the deli meat onto the bottom slice of the bread and top with cheese. Bake in oven for 6-8 minutes or until the cheese has melted
  3. Top with lettuce, tomato and sliced onions
  4. Drizzle with sriracha sauce and enjoy with thousand island or your favourite dipping sauce.
