Blueberry Oatmeal with Honey and Chia Seeds

Here is a super simple and healthy blueberry oatmeal recipe that I'm sure you're going to love for a speedy but tasty breakfast! This will only take five minutes but it's so sweet and creamy by cooking the oats with milk and adding chia seeds. Top with honey and white chocolate chips for extra sweetness. 

A Super Breakfast with Super-foods!

This creamy and sweet blueberry oatmeal with honey and chia seeds is one powerhouse of a nutritious breakfast! Trust me! We’ve got a hunger-crushing combination of oatmeal, blueberries, and chia seeds. All three of these ingredients have lots of fibre, which I think is an important consideration to make when you’re deciding what to have for breakfast. According to P&G, having lots of fibre in the morning will help you feel satisfied until lunchtime. In fact, one of their breakfast ideas is overnight oats with berries!

P&G states that berries have more fibre than other fruits. Berries are also a source of antioxidants, and blueberries are among the berries that have the highest antioxidant activity. You can be sure that these oats are loaded with blueberries, so you’ll surely reap those benefits with this recipe!

The other super-food here is chia seeds. Chia seeds also have antioxidant properties, and they are a rich source of omega-3 fatty acids. This is important because Omega-3 fatty acids help raise the “good” cholesterol, known as HDL cholesterol, that protects against heart attack and stroke.

Ingredients for Blueberry Oatmeal with Honey and Chia Seeds

You’ll only need a handful of ingredients to make this speedy and tasty breakfast! Here’s what you’ll need:

  • Blueberries, fresh or frozen

  • Chia seeds

  • Quick oats

  • Milk of choice (I used regular dairy milk)

  • Vanilla extract

  • White chocolate chips

  • Honey

Fresh or Frozen Blueberries?

I used frozen blueberries to achieve this look because the juices from the blueberries just seeped into the milk while cooking, while the additional blueberries on top also added a vibrant pop of colour. Unfortunately, you may not get this result with fresh blueberries, so I do recommend that you use frozen blueberries. You could try using frozen blueberries while cooking the oats and top with fresh blueberries if you’d like!

Eat With Your Eyes!

As we’ve established that the ingredients in this creamy and sweet blueberry oatmeal recipe are very nutritious and have a lot of utility in being part of a healthy breakfast, let’s be honest here and say these oats just look darn gorgeous!

You’ll want to start by cooking your oats. Add the oats and milk to your pot and bring to a simmer.

Then, add the chia seeds and vanilla extract.

Adding half the blueberries in the oat and milk mixture will make that milk the gorgeous purple colour.

Now it’s time for the assembly! We’re going to add more blueberries to really achieve a lovely purple colour throughout the entire dish. Topping the oats with some honey will add a glorious gloss on top. Finally, we’ve got the show-stopper here, which is the white chocolate chips! Of course you can use whichever type of chocolate chips you like, but the white chocolate chips not only add that extra pop of colour but white chocolate is so creamy, and I find that the richness of white chocolate goes so well with the blueberries!

Blueberry Oatmeal with Honey and Chia Seeds

A must have oatmeal for any fans of blueberries. The delicious berries are infused throughout the oats, as well as topped for additional texture and natural sweetness.

Ingredients:

Instructions:

  1. Heat a saucepan on medium heat and add oats and milk and bring to a boil.
  2. Add vanilla extract and once oats come a simmer, cook until they become thick or to your preference.
  3. Add half the blueberries, chia seeds and give it a quick mix.
  4. Pour oats into a bowl and top with remaining blueberries, honey and white chocolate chips. Serve hot and enjoy.
  5. Place a sauce pan on medium heat and add the oats and milk.
  6. Continuously stir the mixture until the milk comes up to a simmer. Add in half of the blueberries and stir well to bring the mixture together, adding more milk if necessary to maintain consistency.
  7. Add vanilla and chia seeds and mix well to combine. Once oatmeal has reached a thick, creamy consistency take oatmeal off the heat. 
  8. Serve oatmeal warm with spoonfuls of white chocolate chips, blueberries and honey.
