Pepperoni Pizza Bagels are my favourite, but I wanted to provide a vegetarian option to all the vegetarians out there, or if you just don’t want to have pepperoni!

Healthy: Hear me out! This Healthy Veggie Pizza Bagel recipe is an excellent opportunity for you to incorporate veggies in your diet in a delicious way. Furthermore, in appropriate amounts, mozzarella is a great source of protein and calcium. Also, you can easily use your favourite multigrain bagel, an assortment of vegetables and you have yourself a complete meal.
Exciting breakfast: Your favourite pizzeria probably isn’t open in the morning, but if you want to start your day on the right foot, then you can make this quick Healthy Veggie Pizza Bagel recipe in under 10 minutes if you’ve already made your sauce the night before! I’m certain that pizza bagels will become your new favourite hot breakfast!
What Type of Bagel Should I use For Pizza Bagels?
I love bagels when they’re warm enough to become soft and fluffy, yet still lightly toasted. To enjoy veggie pizza bagels this way, with a molten, bubbly cheese, I prefer to place them under the oven broiler.
As for what type of bagel to use, you can use any one of your favourite bagels, except those that are sweet, such as cinnamon raisin bagels or blueberry bagels! The previously mentioned bagels most probably would not pair well with tomato sauce and vegetables. My preferences are either herb and cheese or everything bagels to make pizza bagels. However, you can’t go wrong with simple plain bagels, and that’s what I’ve used here! Other types of bagels that would be the perfect base for Veggie Pizza Bagels include:
All dressed
Garlic herb
Sesame seed
Poppy seed
Jalapeno and cheddar
With that being said, if you already have savoury bagels on hand, then there’s no need to go out to the store and get more! You can switch up your bagel choice to have variety and enjoy pizza bagels a new way every time, but if you have some bagels that are waiting to be eaten, then as long as they are not sweet, you’ll be good to go!
What Cheese Should I use for Healthy Veggie Pizza bagels?
I like to use a combination of two cheeses when making pizza bagels. I certainly recommend that no matter what, you make your veggie pizza bagels with mozzarella cheese. This is because mozzarella cheese is creamy and gives you the cheese pulls everyone loves when it comes to pizza! However, the problem with mozzarella is that there is not much flavour, which is where a secondary cheese comes in. My preferred choice is provolone because I use half a slice to cover the hole in the bagel so that our toppings don’t sink in the hole when broiling! I also like the creaminess and richness of provolone as it complements the mozzarella well. With that being said, there are lots of options you can use to mix and match with mozzarella. You can even add a third cheese, if desired! Here are cheeses that would be perfect to make your veggie pizza bagels your own:
Swiss
Monterey Jack
Parmesan
Pecorino Romano

Ingredients for Vegetarian Pizza Bagels
Let’s review what we’ll need to make our Healthy Veggie Pizza Bagels! You can also scale the recipe based on how many pizza bagels you want to make. By default, the ingredients make enough for 2 pizza bagels.
For the Tomato Sauce
Garlic cloves
For the Veggie Pizza Bagels
Bagels: Use your favourite kind of bagel, but my recommendations would be plain, cheese, or everything.
Cheese: Mozzarella is a must here because it is so creamy and contributes to the cheese pulls! The second cheese that pairs perfectly with mozzarella is provolone. It is also creamy, but it’s got a little more flavour than mozzarella, so I do recommend adding a second cheese with mozzarella.
Veggies: I’m using sliced onions and poblano pepper sliced into rings.
Cherry tomatoes: Cut into quarters.
Basil leaves: Torn and added for garnish.
How to Make Healthy Veggie Pizza Bagels
For the Pizza Sauce
Mix together passata, olive oil, oregano, salt, garlic and chilli flakes. Refrigerate for at least 30 minutes before using.
To Prepare the Pizza Bagels
Slice the bagels in half and arrange the 4 slices on a wire rack over a baking sheet lined with aluminum foil.
Evenly apply the tomato sauce on bagel. Top with half a slice of provolone, using it to cover the center of the bagel. add most of the shredded mozzarella, sliced onions, poblano pepper rings, and cherry tomatoes. Top with a bit of mozzarella cover the toppings.
Place the oven rack at the second highest position in oven and turn on the broiler.
Place the baking sheet in the oven and broil for about 5-8 minutes, or until the cheese is light golden brown.
Top with basil leaves and serve hot!
Tips for Cheesy Vegetarian Pizza Bagels
Slice the bagels evenly using a serrated knife to get clean cuts without damaging the bagel.
The longer the sauce has had the time to sit and meld the flavours together, the better it would be. Once the no-cook sauce is mixed together, refrigerate overnight for the best flavours.
Mix it up and try different cheeses like Monterey jack, cheddar, swiss or even gruyère to add different twists and turns to the bagel pizza experience.
For a more overall toasted bagel, bake the assembled pizza bagels for 5-8 minutes before turning on the broiler to finish browning the cheese.

Can I Make Vegetarian Pizza Bagels iN Advance?
These Healthy Vegetarian Pizza Bagels can be excellent when made ahead, for a fun snack or even meal prep. Simply pop the bagels in the oven at 350 F to reheat until toasty. For a faster and equally tasty experience, you can microwave the pizza bagel for 30 seconds and then place on a preheated non-stick pan with some oil or butter to toast the bagel with the lid on to heat the pizza bagels right back up.
