No Excuses to a Healthy and Tasty Start to the Day
This recipe will show you how I make simple chocolate chip pancakes and pair them with a delicious cookies and cream glaze on top! While it seems simple it was so amazing and fluffy and ultimately delicious! These pancakes are made with a few ingredients that are readily available in your pantry. They’re healthy thanks to the whole wheat flour mixed with all-purpose flour in the batter. The whole wheat flour adds some extra fibre that will keep you full and satisfied, ready to take on the day. You don’t have to fear pancakes in the morning! They certainly can be a healthy option and absolutely delicious, so you don’t need a special occasion to treat yourself!
The Protein Cookies and Cream Glaze
This is one of my many cookies and cream pancakes and it is seriously amazing! As you may be able to tell by now, I really enjoy cookies and cream! While I used cookies and cream protein powder for the glaze feel free to use real Oreo crumbles as that would definitely make it cookies and creamy, and even put them in the batter!
Cinnamon Pancakes with Cookies and Cream Glaze
Get all your ingredients ready and enjoy these tasty pancakes for breakfast today!
Begin by preheating your oven to 200 F. You’ll transfer each cooked pancake onto a baking tray and adding it to the oven to make sure the pancakes stay warm.
The batter for our pancakes has cinnamon, whole wheat flour, all-purpose flour, baking soda and baking powder. Whisk these dry ingredients in a large bowl.
Then, in another bowl, add your egg, milk, and vanilla extract.
Combine the wet ingredients with the dry ingredients. You want a thick, runny batter.
Make the cookies and cream glaze. You don’t have to add the cookies and cream glaze but I highly recommend it! You can see the recipe here. Basically, add your protein powder, milk, and cream cheese and whisk well. So easy so it’s worth the extra few minutes.
Now cook your pancakes. I have a full in-depth tutorial on cooking the perfect pancake in my Honey and Oat Pancakes recipe. Here is the main idea:
Heat a skillet on medium heat. When your pan is hot, add butter. Use a 1/4 cup measuring cup to scoop some batter. Add your chocolate chips and wait for bubbles to form. Then, using a wide flat spatula, flip the pancake over and continue cooking for another 1-2 minutes until golden brown. Then, transfer to the oven. Repeat for the remaining batter.
Finally, scatter your pancakes on a plate. Pour your cookies and cream glaze, and top with whipped cream and an extra dash of cinnamon. Serve hot and enjoy!

Cinnamon Pancakes with Cookies and Cream Glaze
Ingredients:
- 1/2 Cup whole wheat flour
- 1/2 Cup all purpose flour
- 2 tsp baking powder
- 1/4 tsp cinnamon
- 1 1/4 Cup milk or enough to make a thick batter
- 1 large egg
- 1 tsp vanilla extract
- 2 tsp butter
- chocolate chips
- whipped cream
- cinnamon
- Protein Cookies and Cream Glaze, as described below
- 1/4 Cup milk, plus more as needed
- 1 scoop Cookies and Cream protein powder
- 5 oz cream cheese, at room temperature
Instructions:
- Prepare the cookies and cream glaze as described below.
- For the pancakes, preheat the oven to 200 F.
- To make the batter, combine the dry ingredients together in a large bowl. In a separate bowl, add all the wet ingredients and mix well. Transfer the wet mixture to the dry mixture and whisk well either by hand or with a stand mixer.
- Heat a pan on medium heat with butter. Pour 1/4 cup of the batter onto the pan and sprinkle the chocolate chips on the pancake.
- When bubbles start to appear and the underside has become golden brown, flip the pancake. Reduce the heat to medium-low and cook for 1-2 minutes.
- Transfer your pancake onto a baking sheet and keep warm in your oven.
- Repeat steps 4-6 for the remainder of your batter. Lay out your pancakes on a plate and pour your glaze over the top and sprinkle some cinnamon and whipped cream. Serve hot and enjoy :)
- Add the protein powder and cream cheese in a small bowl. Begin whisking vigorously, and gradually add milk. Whisk until the mixture is smooth, then set aside.
