Ultimate Chocolatey S'mores Pancakes

Hey everyone! This ultimate chocolatey s'mores pancake recipe is perfect to enjoy the campfire goodness for breakfast - plus you can make them completely gluten-free!
S’mores are so warm and gooey. I had only ever had them about two times as a kid while actually camping, but believe it or not I truly fell in love with them in my adult life in Canada. With that being said, I was absolutely in love with these s’mores pancakes! This is one of my oldest pancake recipes that I’ve decided to revamp to kick off the new year! Fun fact: this was actually my first meal (with the exception of an omelette!) of 2023! Now isn’t this a special way to ring in the new year?
You probably have everything in your pantry to make our Ultimate Chocolatey S’mores Pancakes! I admit that I’m guilty of letting marshmallows go to waste - it’s not my fault they give such a large package! However, in an effort to try not to waste your marshmallows, this is the perfect recipe to use them up! If you’re a marshmallow lover, then these pancakes sure don’t fall short of marshmallow goodness! Additionally, we’ve got other simple pantry staples you most likely already have, from graham crackers to dark chocolate to flour and baking powder. Got a gluten intolerance? No worries! While these pancakes look absolutely sinful, they are entirely gluten-free! I’ll teach you exactly how!

Why are s’mores called s’mores?
S’mores simply is short for “some mores!” I’m not quite sure why this is the name, but I suppose you always want some more s’mores right! Why You’ll Love Chocolatey S’mores Pancakes
These s’mores pancakes are super fluffy and they’ll remind you of your campfire favourite! We’ve got graham crackers in the batter and sprinkled on top. Furthermore, we’re not only topping our pancakes with marshmallows, but we’re making a marshmallow CREAM! It’ll be ready in just a few minutes, so you can prepare the cream as you let your batter set. We’ll be roasting our marshmallows on top for that campfire flare, and we’ll add some shaved chocolate to truly make these like s’mores!

Ingredient for Delicious S’mores Pancakes
I have to tell you that these pancakes become so gooey just like your favourite s'mores by the campfire. That’s what I loved most about these pancakes! Now let’s not forget that they will be very chocolatey too! Be sure to be generous in both the marshmallows and the chocolate in this recipe - I didn’t call them ULTIMATE Chocolatey S’mores Pancakes for no reason!
For all measurements and the full recipe instructions, make sure you scroll down to the bottom of this post for the FULL PRINTABLE RECIPE CARD! You can easily scale the quantities based on how many pancakes you want to make! This recipe made a huge stack so it’s perfect to serve your family, but of course you can reduce down if you’re just making these for yourself!
For the pancake batter
In this recipe, we have our usual pancake batter with the following ingredients:
All-purpose flour. You can either use gluten-free all-purpose flour as I did here made with garbanzo beans, the 1 to 1 gluten-free baking flour, or rice flour (as you’ll see in the second stack in the background they’re not as fluffy or as dark but they were still delicious and gluten-free!)
Egg
Milk. Use lactose-free milk if you’re sensitive to lactose - there’s no difference in taste! You can use non-dairy milk too, but keep in mind the fluffiness and taste will be affected.
Butter, molten
One extra add-in here is crumbled graham crackers for the batter. If you have a gluten-sensitivity, then go for gluten-free graham crackers!

Dark chocolate, shaved
Graham crackers, crumbled
Cooking the S’mores Pancakes
Preheat your oven to 200 F. This is a must to keep your pancakes warm as you cook the others! Add each cooked pancake onto a baking tray and transfer to the oven.
Bring a non-stick pan or griddle to medium heat. Prepare the batter by whisking together the flour, baking powder and graham crackers.
In a separate bowl, add the milk, egg, vanilla extract and molten butter.
Add the wet mixture to the dry, and whisk well either by hand or using a stand mixer until you have a thick but runny batter.
When the pan is hot, using a 1/4 cup measuring cup, pour some pancake batter onto the pan.
When you start to see bubbles forming, after about 2-3 minutes, gently flip your pancake, and cook for another minute or two. Transfer the cooked pancake onto a baking tray, and add the baking tray to the oven. Repeat with the remaining pancake batter.
The Marshmallow Cream
As you can see, everything from the classic s’mores cookie is going to make this pancake batter incredible, bursting with that goodness you know and love. We’re going to have even more marshmallows with the marshmallow cream! You could use packaged marshmallow fluff, which I do find really tasty, but here I wanted to make my own cream to have a slightly more runny sauce with these pancakes. The insides of the pancakes will be really thick and gooey from the marshmallows, so I didn’t want the pancakes to be too sticky! You don’t have to worry, though! This cream is absolutely so simple to make and it’ll be worth the extra step! Just two ingredients and a couple of minutes and you’re set for your topping for these s’mores pancakes!
To make the cream, simply melt the marshmallows using the double boiler method. This is where you will bring a pot of water to a boil, and then add a bowl on top to heat something indirectly. Put the marshmallows in the bowl, and the boiling water from the pot will melt the marshmallows.
After the marshmallows have completely melted, add a bit of milk and whisk until you have a thick and creamy batter. Now, this will be really delicious, so try to resist snacking on some until it’s time to top your pancakes!
Assemble Your Chocolatey S’mores Pancake Stack!
Stack the pancakes on the serving plate and then top with the marshmallow cream.
Cover the top with mini marshmallows and use a flambe torch to roast the marshmallows.
Shave dark chocolate over the top and add crumbled graham crackers.

Tips for The Fluffiest S’mores pancakes
Whisk the dry and wet ingredients separately before combining the two together. This helps ensure that the ingredients are evenly distributed while cooking the pancakes.
Lumps are actually not an issue when it comes to pancake batter and only adds to the texture and tastiness. There’s no need to over-mix the batter for the pancakes.
Make sure the pan is not too hot otherwise the pancakes will become too brown and crispy. A good way to test for this is when you add butter to the pan it should remain white. If it turns brown and nutty instantly, take the pan off the heat for a minute or so.
Let one side of the pancake cook well before flipping to avoid breaking the pancakes. If the surface of the pancakes has small bubbles, this is a good indication of when it is time to flip.
Variations
I think these Ultimate Chocolatey S’mores Pancakes really do hit the spot and give you the essence of s’mores! However, there are some ways to switch these up if you would like for a unique s’mores pancake experience each time! Here are some ideas:
Pancake batter: You could make these s’mores pancakes on the inside and out by throwing in mini marshmallows and chocolate or chocolate chips in the batter!
Sauce: If you want to save some time, you could use marshmallow fluff in place of making the marshmallow cream. However, keep in mind that marshmallow cream is slightly thicker than the cream will be, so it won’t pour as easily. You can also make these even more chocolatey by topping with my Cafe Mocha Chocolate Syrup!
Other toppings: If you want a true roasted campfire experience going on, I recommend you top your s’mores pancake stack with some sliced strawberries and/or bananas! You can also add a whole piece of chocolate and/or chocolate chips instead of shaved if desired - it’ll melt over the nice hot pancakes!
Can You Make S’mores Pancakes In Advance?
Technically you can make the pancakes themselves in advance, but I wouldn’t store assembled pancakes with toppings! Furthermore, I wouldn’t recommend making the batter in advance because it will get too thick. Store any leftover cooked pancakes in the fridge in airtight container. The pancakes will stay fresh for about 4 days.
If you’ve made the plain pancakes in advance, you can reheat them over the stove on a pan on medium-low heat. You could also reheat them in the oven at 200 F for about 10 minutes, or until warmed through. Then, add your toppings and enjoy!
