Chunky Mango Guacamole

I always look forward to making a fresh batch of guacamole! I actually get so excited, because while I wouldn’t say that it’s on a special occasion that I make guacamole, it still is about two out of four weeks in a month. For me that’s special enough! I’ve got my tried and true Incredible Easy Homemade Guacamole recipe that I always fall back on!

However, sometimes you just wanna switch things up. If you didn’t know, mangoes are my favourite fruit. I was preparing my Pan-Seared Scallops and was wondering what the perfect accompaniment to the scallops would be. I didn’t want to make regular old guacamole for those special scallops. So what did I do? Come up with this Chunky Mango Guacamole!

Oh my goodness did this go so well with the scallops! I was wondering why have I never tried this combination before? It’s out of this world! The mangoes totally transform the way you know guacamole! The mangoes add such an amazing sweetness and really add a tropical flair to your guacamole!

If you want to try a new variation to the typical guacamole, then this recipe is for you! It’s creamy, delicious, and just as easy to make! Let’s get to the recipe!

How to Know the avocado is ready for guacamole?

When it comes to guacamole, you really want to make sure you have the perfect avocado. If it’s not ripe yet then it won’t mash, and if it’s too ripe with brown spots then your guacamole won’t have a pretty brown colour! Technically you could still eat your guacamole even if the avocado isn’t the brightest green, and I really hope you won’t waste your avocado, but it just won’t be pretty or the tastiest. For me showing this on camera, that’s added pressure, and I always feel that way when I’m sharing avocado recipes! However, follow these tips at the grocery store when shopping for your avocados and you’ll be just fine!

You’ve got the perfect avocado when it’s black and not green. In some cases, greenish black ones are fine! To tell if the avocado is ready for guacamole, press the avocado lightly. The perfect avocado will be slightly dented but also will bounce back. If there is no dent when you press at all, then it’s not ripe. If it’s pushed in too easily and quickly, then it’s spoiled! If you’re going to get avocados in bulk, then I’d recommend you get some green ones to be safe. However, if you’re purchasing your avocado to make guacamole on the same day, then I’d go for a black one.

  • Avocado

  • Onion

  • Tomato

  • Mango

  • Green chilies

  • Garlic

  • Salt

  • Pepper

  • Lime juice

How to Make Chunky Mango Guacamole

Peel your mango and dice into small cubes.

Cut open your avocado, peel from the skin, and cut into four slices.

In a large bowl, add an avocado and starting mashing it. Then add the mangoes, onions, garlic, green chilies, cilantro, salt and pepper to taste.

Mix everything together, until the guacamole is smooth, taste and adjust for seasoning with salt, pepper or lime juice.

How to Serve Mango Guacamole

You can honestly use this Chunky Mango Guacamole in pretty much any recipe that calls for a “regular” guacamole! What I love about this guacamole is the added sweetness that comes from the mangoes! That totally transforms the guacamole entirely, and it’s such a joy on its own! With that being said, here are some dishes where you can serve this awesome Mango Guacamole!

Of course, you can simply enjoy this Mango Guacamole as a dip for chips or spread it on some toast for guacamole toast!

How to Store Mango Guacamole

People often complain that their guacamole has turned brown when storing leftovers. This is because avocados oxidize easily when exposed to air. My recommendation to store your guacamole is in a jar or in a bowl that’s tightly wrapped in saran wrap. When you’re wrapping your bowl with the saran wrap, press down and push out any air from the bowl. This will help to reduce the amount of air exposure and will slow down the oxidation process. Chunky Mango Guacamole will stay fresh in the fridge for up to 3 days.

If the top of your guacamole does in fact turn brown, then don’t worry! It’s still just as delicious as when you made it, and all you need to do is refresh it by stirring your guacamole or simply tossing out the brown parts!
